Agriculture and Agri-Food Canada SoyCow "E" for R&D on New Tofu Products

Since the installation December 2010 this government facility has been producing soymilk and tofu daily, for research and development purposes including new freeze dried tofu and the optimization of soybean varieties for tofu.

Santa Elena, Belize

At a multi-food production facility in rural Belize, a dual set of SoyCow systems has been installed in Oct. 2010. This project is sponsored by the Americn philanthropist, Dr. Robert Wyckoff, who personally finances and supervises it with regular visits.

Supervisors and four student workers were trained in the operation and production of flavored soymilk yogurt and tofu. This double set of systems is capable of producing about 60 liters or 16 gallons of milk per hour. After gradually increasing their production, they reached a daily output of about 260 liters (100 gallons), and are making and selling soymilk and yogurt to the nearby community at an affordable local price.

A woman is shown “hot filling” the plastic bottles, before they are quick-cooled in a water bath and then placed in a refrigerator. This process extends the shelf-life of the product. A dual set of cookers and presses is also shown. These are connected to an existing steam boiler which is positioned behind the outside wall. Using two cookers allows not only higher production but also the sharing of other infrastructure. One of the electric grinders can be used to do all the grinding for both systems, while a second one is a back-up. One system can be cooking while the other is being unloaded for pressing etc. The project is planning a third cooker, which could be operated without the need for any extra grinder.

Pictured are the two resident nuns who work with the SoyCow. The project makes and sells tofu to their network of supporters, which helps with the financial support of the center. Installation and training was provided without charge by Malnutrition Matters' specialist. This project is currently the first and only "micro-enterprise" in North America using a SoyCow.

Collaboration with NSRL / University of Illinois

The National Soybean Research Laboratory has a VitaGoat and SoyCow to allow for training and demonstrations in their pilot plant at the University of Illinois. Besides this facility, NSRL is also providing specialists for installation and training services for projects in Central America.
